For the longest time I used the Polygonal Lasso Tool but lately I’ve been using the Pen Tool which is great because it can make smooth curved edges and the cutout result looks much better. There is a tutorial here on how to use the pen tool (just scroll down until you see an animation with a pear) and there is also an extensive tutorial here on how to use different methods for cutting pictures (scroll down to number 4 for the pen tool tutorial).
